The Salad Wagon

Teach nutrition and encourage your students to try new things with this fun, portable garden! This easy project can be constructed out of any new or used wagon with closed sides. The only thing you'll have to do is drill a few holes into the bottom to provide plenty of drainage, fill with soil, and keep it moist. Thanks to the wheels, you can roll it outside for sunlight, then back into the classroom or shed for protection from flying dodge balls and would-be vandals. Try planting spinach, lettuce, chives, herbs, and radishes, then making a salad bar when the plants have matured.

Pizza Garden

For a fun nutrition-, math-, and social studies-based garden, prepare an outdoor circular plot and using stone or lumber, then divide the circle into sixths like a pizza. In each "slice," plant a different pizza ingredient. For example, grow wheat for the flour in the crust; onions, tomatoes, peppers, and basil will go into the sauce; and eggplant can be used as a topping. Mix and match based on your climate and your students’ interests. While creating a pizza from these ingredients is not always practical or possible, this garden is highly educational and will connect students with their food and nutrition—especially if you provide a pizza treat to celebrate their work at the end of the year.
